Easy Mac n Cheese with Turmeric Cottage Cheese Sauce

My love of mac n cheese is infinite. In fact, mac n cheese is definitely my favorite food. The amount of mac that I ate when I was pregnant with my son...well, let's not go there.


I have another confession. After cooking all day for other people, I often have zero energy to get back in the kitchen to make dinner for my family. Sigh. It is sad but true. I tend to keep a few frozen meals in the freezer that I can quickly heat up for myself. You guessed it...I eat a lot of frozen mac n cheese.


Recently, I had the time and the motivation to cook for myself, which is how I ended up crafting a batch of this yummy + veggie loaded healthy mac n cheese.

Adding veggies to the dish was a given. I mean, I rely on pasta dishes to help get my vegetables in. What I wanted to figure out was how to make a cheese sauce that would provide some extra nutrition. Why can't a girl eat her mac and fight free radicals and reduce inflammation too? That's the dream.


I knew that I would use turmeric for both color and health benefits. But I wanted more. I wanted extra protein. I wanted to not reinjure my shoulder grating cups of cheese (Yes, I recently grated so much cheese that I ended up with what my family dubbed "cheese shoulder". And yes, I will find the attachment for my food processor so that doesn't happen again.) I wanted an easy, quick cheesy sauce that I could feel good about.


Turmeric + Nutritional Yeast + Cottage Cheese + Almond Milk + Mozzarella came together in the blender for the perfect, easy base for the sauce.


Nutritional yeast is a go-to for many vegan recipes, but it doesn't have to be solely used in vegan cooking. Because it provides a savory flavor boost and it is rich in antioxidants and B Vitamins, many dishes can benefit from using it. This mac n cheese sauce definitely got a nutrition and flavor boost from it.

Season the good fresh beef fillets with salt and black pepper. Heat olive oil in a pan over high heat and sear the fillets for 2 minutes per side until it fully browned. Remove the beef from the pan and brush with a thin layer of mustard. Let it cool.
