Have you ever come across a dipping sauce so divine that you imagine filling a bathtub with it? No? Just me? I'll admit that it's a weird concept, but every now and then, the notion crosses my mind. This peanut butter with tamarind dipping sauce inspires visions like that, and I am happy to share the recipe with you today.
Before I get to this amazingly simple and quick recipe, I have a short story to share. When my husband and I bought our house, a good friend stopped by one day to check it out. Let's call this friend Tommy Toe. Tommy Toe is the kind of person who observes everything and has a running hilarious commentary that not everyone can pull off. He truly is one of a kind. That day he waltzed into the kitchen and went straight to our old as heck refrigerator, opened it and began snooping through the contents. He was genuinely interested in what type of condiments we had. At the time there wasn't much to see. Nothing bold or exciting. It felt like a test that I failed.
Secretly for years, I have been trying to rectify that. Should the day come that someone rummages through my refrigerator again, I want them to find all the things. This peanut sauce made me think of Tommy Toe. There is a small bowl of it sitting in my refrigerator next to some crispy tofu cubes, bibb lettuce, and crudité. Should a snoop dig around this time, I'd be able to offer up something tasty. Hopefully this time, it won't end with a broken toe earned by stretching in a linen closet.

This sauce is so yummy. I firmly believe you will pull it out when you need the big guns. The ingredients are straight-forward and mostly comprised of things you will already have in your pantry. It is also customizable. I have added garlic to it for a little extra zing, but often my clients cannot have garlic, so I omit it, and it's just as pleasing without. It can be made with almond butter if you don't do peanuts. If tamarind is an issue, you can leave that out and still have a really nice sauce. Soy sauce can be subbed out with coconut aminos or tamari.

Place all ingredients in a high-powered blender and combine until smooth and creamy. You may need to add more water if the mixture seizes up. It should lighten in color and be pourable.
