Vodka Sauce Secrets

The first secret of vodka sauce is how incredibly easy it is to make. You can whip a batch of this delicious sauce in about 20 minutes, which makes it a good choice for a quick and comfy dinner that adults and kids will both enjoy.
Pair this sauce with your favorite pasta, slather it on chicken cutlets, and use it as a pizza sauce.

The second secret to amazing vodka sauce is double concentrated tomato paste. You heard me. Double concentrated tomato paste really elevates the flavor profile of any dish that calls for tomato paste, but I feel it especially shines in vodka sauce.
This next thing isn't really a secret, but it has changed my prep for many dishes, and I just love how easy it makes dealing with onions. Use your food processor to chop those babies up. There is a risk of course, of the onions getting too blitzed, but with this sauce, it only improves the outcome because the other tool that I use is an immersion blender. You see, I have found kids generally like the flavor of the sauce, but they don't appreciate chunks of onion. In fact, it can be a deal breaker. So, after the sauce has simmered and thickened, I use the immersion blender to blast any blasted onion chunks to smithereens.
I prefer to use heavy cream for the most luxurious texture, but you can use half-n-half if that is your preference. I've adapted this recipe for vegan clients and pulled off a nice version with coconut cream too.

With these little tidbits, I guarantee you will make a vodka sauce that you and your family will ENJOY!!!

Start by prepping the onion and garlic. Dice onion with food processor for ease and quickness. Set aside and then finely chop garlic by hand.

Add butter or olive oil to deep heavy bottomed pot over medium heat. When butter is melted or olive oil is shimmery, add onions and sauté until translucent. Next add garlic and sauté for about 30 seconds more.

Add both tubes of tomato paste to the onion and garlic mixture and mix until well combined.

Next add 1/2 cup of vodka and stir for about a minute until alcohol is cooked off.

Add heavy cream and thoroughly mix until sauce is a nice orange-red color. Then continue to mix frequently until the sauce thickens up. It will thicken more when it cools, so keep this in mind as you figure out what kind of consistency you prefer. After the sauce has thickened to your liking, use an immersion blender or regular blender (if using a regular blender, be sure to let the sauce cool a bit before blending, and still be very careful when opening the lid after blending).
